The term cholesterol, which we often encounter, currently associates us with fat, circulatory problems, and finally, heart problems. Cholesterol is present in every living cell of humans and animals because it is an essential metabolite and is most abundant in animal foods,.
It is an integral part of the cell membrane, participates in metabolic processes in the metabolism, serves for the synthesis of adrenal hormones and sex hormones, and fat-soluble vitamins, as well as for the synthesis of vitamin D, is a precursor of bile acids that serve in the digestion and absorption of fat.
If cholesterol levels are elevated they become a risk factor for the development of the cardiovascular disease.
Endogenous cholesterol is generated in the body while the exogenous is ingested by food and exclusively in animal foods.
Cholesterol is transmitted by lipoproteins – the values of LDL lipoprotein or low-density lipoprotein and HDL lipoprotein or high-density lipoprotein are important for health. Increased levels of total and LDL cholesterol and decreased levels of HDL cholesterol are thought to increase the risk of developing chronic heart and blood vessel disease.
LDL lipoproteins transmit cholesterol through the blood to the cells, and excess cholesterol can deposit on the walls of blood vessels, creating plaque that can cause atherosclerosis.
On the other hand, unlike low-density lipoproteins, high-density lipoproteins circulate in the blood and remove excess cholesterol by returning it to the liver, and there is no accumulation of this cholesterol on the blood vessel walls and the development of atherosclerosis. Therefore, HDL cholesterol is called good cholesterol.
High cholesterol increases the risk of heart disease, heart attack, and stroke. Although hereditary factors may be cited as the main culprit – most commonly, high cholesterol is a combination of lack of physical activity and a diet rich in saturated fat.
Good and bad cholesterol
The diet to take into account is not the amount of cholesterol in foods but the saturated fatty acids in them. Saturated fats are found in meat, meat products, eggs, milk and dairy products, and in biscuits, pastries and cakes.
In theory, these fats raise the level of total cholesterol, especially LDL-cholesterol (bad cholesterol). Poultry meat, however, contains very little saturated fat if the skin is removed.
Those good fats, ie polyunsaturated fatty acids of animal origin, are mostly found in fish. By eating fish oil, LDL-cholesterol and triglycerides will be significantly reduced. Blood becomes thinner and the risk of clotting is reduced.
Contrary to previous belief, the more oily the fish, the more favorable it is on cholesterol. This applies to both marine and river fish, and blue and whitefish.
Eskimos, whose diet is based on fish and fish oil, have almost no vascular disease at all.
The antidote for bad cholesterol
We could say that fish in olive oil is almost the antidote to bad cholesterol. Single unsaturated fatty acids also include goose and duck fat. It seems that one can still enjoy the roast duck. But caution with the attachments.
Specifically, fiber is important for fat metabolism. Make sure you significantly increase the number of fruits, vegetables, bran, legumes, algae and especially green vegetables in your diet. Such a choice of foods will have a beneficial effect on your digestion.

Causes of elevated LDL
In some cases, high cholesterol levels may be hereditary. Your liver produces too much cholesterol or the body cannot effectively remove LDL cholesterol from the blood.
Elevated cholesterol and triglycerides can also be linked to other diseases – such as diabetes. But the most common cause of high cholesterol is a diet rich in saturated fat and too little physical activity. High cholesterol is a common occurrence in people who are overweight or overweight.
There are foods that can lower blood cholesterol. But if LDL cholesterol levels remain high even after the patient has changed their eating habits and introduced physical activity into their daily routine – the doctor will most likely prescribe medication to lower it.
